Unfortunately, mail servers (with few exceptions) require that the "from" address of the e-mail is listed as a user with access to the server (e.g. you can only send mail if you have a domain parked on the server or if the from address is a valid POP account on the server). For this reason, you cannot modify the from address of the e-mail as mail would most likely not be sent. This is all part of a global effort to help eliminate spam as using an unprotected sendmail is the most common culprit (also referred to as open relays).
